“Iron Infusion” BEET & PRUNE SALAD

BEET & PRUNE SALAD

Beets are naturally high in many vitamins including vitamin C, A, K, B vitamins, folate and iron. Prunes are also a great source of iron as well as vitamins A, C, K, B6, copper, manganese, and potassium. Both are high in phytonutrients and antioxidants, hence the deep red/purple coloring! This salad is fantastic for prenatal or postpartum anemia, supports a healthy gut, prevents constipation, lowers blood pressure and even helps to maintain bone density. It is a powerhouse of nutrients and it is YUMMY.

Ingredients: roasted fresh beets, dried prunes, chopped walnuts, EVOO, sea salt, balsamic vinegar, garlic, cilantro, greek yogurt

*first 3 ingredients not organic, locally grown beets seasonal
